Word to the wise:
The Spinach-Rice Casserole from the original Moosewood Cookbook is AWESOMELY GOOD.
I made a few minor changes -- used olive oil instead of butter (didn't measure, though), and used two 10 oz. boxes of frozen spinach because that's what I had on hand -- but basically, I made it as written.
Also, I have two crockpots going -- one with a pot roast, and one with baked beans. Excessive, possibly, but we seem to be settling into winter quite cheerfully! (Supposedly, there might be snow tonight...!)
